Mission Garden and Carlos Figueroa of Maiz Tucson have joined forces to give you this upcoming event! Carlos realized that good corn tortillas are hard to find in Tucson but are critical to much of Mexico's cuisine. Part of his quest to make and sell great corn tortillas is working with heirloom corn varieties. Mission Garden, along with Arevalos Farm, are growing heirloom corn for Carlos. He will do a series of demonstrations in the garden of all the steps between the harvesting corn and the ingestion of these tortillas. This includes preparation of the corn through the process of "nixtamalization," and milling the corn into masa, from which tortillas are made.
